Years spent working and exploring abroad left us fascinated by the way salt carries the fingerprint of a region — its geology, history, trade, and culture.

At Huron Bries, these salts are not used simply for novelty. They represent the idea that food can carry memory, geography, and experience. Each one reflects places that shaped our perspective.

From the Andes of Colombia to the deserts of India, from the ancient mines of Poland to the mineral waters of the Dead Sea — those experiences now find their way into the cheeses crafted along the windswept shores of Lake Huron.

Each finishing salt we use tells a story older than the farm itself. Some come from ancient seabeds buried beneath mountains. Others emerge from desert waters at the lowest point on earth. Together, they connect Northern Michigan to places that have inspired us across the world.

The Wieliczka Salt Mine

Near Kraków · Operating since the 13th Century

Near Kraków, deep beneath the earth of southern Poland, lies one of the oldest and most extraordinary salt mines in the world. The Wieliczka Salt Mine has been operating since the 13th century and became so important to the Polish kingdom that it was once known as "white gold."

Over centuries, miners carved entire chapels, chambers, sculptures, and underground cathedrals directly into the salt itself — a monument to craftsmanship, endurance, and human ingenuity now recognized as a UNESCO World Heritage Site.

The Salt Cathedral of Zipaquirá

North of Bogotá · Andes Mountains of Colombia

North of Bogotá, in the Andes of Colombia, miners spent generations extracting salt from ancient underground deposits left behind by prehistoric seas. Within those tunnels, they eventually carved one of the most breathtaking underground sanctuaries in the world.

Part mine, part cathedral, part work of art — the site reflects the deep spiritual and cultural connection the region has to salt and the miners who labored there across generations.

At the lowest point on earth, the waters of the Dead Sea have supplied minerals, salts, and trade routes since the ancient world. The intense evaporation and unique mineral composition create salts unlike anywhere else — rich in magnesium, potassium, and trace minerals shaped by one of the harshest climates on the planet.

The Desert Salts of Gujarat

The Great Rann of Kutch · Western India

In western India, the vast salt flats of Gujarat have produced salt for centuries under some of the harshest conditions imaginable. Across the Great Rann of Kutch, families known as the Agariyas continue the ancient practice of harvesting salt by hand beneath intense desert heat and blinding white landscapes that stretch to the horizon.

Salt production here is both physically demanding and deeply cultural — tied to trade, survival, and independence. The resilience of the Agariyas and the landscape they work is something we carry enormous respect for.

Himalayan Pink Salt

Formed from ancient seabeds more than 250 million years ago, Himalayan pink salt comes from the legendary Khewra Salt Mine at the foothills of the Himalayan range. Long prized throughout South Asia and the ancient trade routes beyond it, the salt is known for its distinctive rose color and subtle mineral complexity.

The mine itself is immense — one of the oldest and largest salt mines on earth — with glowing chambers of pink crystal carved deep into the mountainside. There is something humbling about working with a material older than the mountains themselves.
