Our
Philosophy
Exceptional cheese begins long before milk ever reaches the creamery. It begins in healthy soil. In clean water. In animals raised with dignity.
Our Belief
It begins in healthy soil.In clean water. In animals that are raised with dignity. And in a willingness to work with nature —instead of against it.
Our farm in Northern Michigan was built around the idea that food should reflect the land it comes from — and the people who care enough to do things the hard way when the easy way would be faster.
What We Stand For
These are not marketing slogans. They are commitments — built into every decision we make, every season we farm, every wheel of cheese we age.
"We are committed to regenerative farming
practices that restore the ground beneath us
rather than deplete it."
Through rotational grazing, thoughtful land stewardship, renewable energy investments, water conservation, and growing much of our own feed, we aim to create a farm ecosystem that becomes healthier and more resilient with every passing season.
Healthy animals are not a marketing slogan here. They are the foundation of everything we do.
We believe milk carries the story of the pasture, the weather, the seasons, and the care given to the herd. That story ultimately becomes flavor — rich, complex, and impossible to fake.
This is why our approach to cheesemaking begins not in the creamery, but in the field. The grasses, the rotation, the water quality, the air — all of it matters.
What you taste in a wheel of Huron Brie is not just cheese. It is a season. It is a pasture. It is a choice made thousands of times before the milk ever left the animal.
Stewardship of Land
We are caretakers, not owners. Our responsibility is to leave this land healthier than we found it — restoring soil biology, protecting water sources, and preserving habitat for future generations.
CORE COMMITMENT
Regenerative Farming
Beyond sustainable — we farm regeneratively. Rotational grazing, cover cropping, and composting work together to actively rebuild soil health and sequester carbon with every season.
Active Restoration
Animal Welfare
Our herd lives as animals are meant to live. Open pastures. Rotational movement. Zero antibiotics. Genuine care. We believe the wellbeing of our animals is directly inseparable from the quality of what they produce.
Foundation
Small-Batch Craftsmanship
We will never scale past what we can do well. Every wheel is made in small batches, aged on our own floors, turned by hand. The shortcuts that exist are there because they've been refused, not overlooked.
No Compromise
Sustainability
Solar generation, geothermal systems, rainwater capture, and closed-loop composting power our farm and creamery. Sustainability here is architecture, not aspiration — built into every system we operate.
Operational
Respect for Food
Food is not a commodity. It is culture, memory, nourishment, and connection. We make cheese the way it deserves to be made — with patience, skill, and a deep respect for every ingredient and every process.
Philosophy
Reducing Waste
Whey becomes feed. Rinds are composted. Packaging is being redesigned. We track our waste the way we track our yield — with serious intention to reduce both what we discard and the footprint we leave behind.
Closed Loop
Producing Locally
When possible, everything comes from here. Our feed, our water, our energy — as much as the land can provide. Shorter supply chains mean fresher milk, lower emissions, and a product that genuinely tastes like Northern Michigan.
Rooted Here
Shaped by Curiosity
But Huron Bries is also shaped by curiosity. Years spent traveling, working, and exploring different parts of the world left a lasting impression on us — especially the way regional ingredients and traditions can tell the story of a place.
That spirit of exploration finds its way into our cheeses through carefully selected salts, aging techniques, pairings, and flavor inspirations gathered from coastlines, mountain villages, old markets, and kitchens across the globe.
Some cheeses may carry the minerality of Mediterranean sea salts. Others may be inspired by alpine traditions, smoky coastal flavors, or combinations discovered during years of travel and conversation with people who care deeply about food and craft.
We are not trying to imitate someone else's region.
We are trying to create something unmistakably our own.

Why Northern Michigan
People often ask why we chose Northern Michigan for a creamery and farm. The answer is simple: character comes from challenge.
Northern Michigan is beautiful, but it is not easy. The long winters, shifting seasons, strong winds coming off Lake Huron, sandy soils, and unpredictable conditions force both the land and the people here to fight for their place. That struggle creates resilience.
We believe it creates better food too.
Many famous cheese regions around the world — from the Alps to the Atlantic coast — were shaped by difficult landscapes and harsh climates. Northern Michigan shares that same spirit: hardy, independent, windswept, and deeply connected to the natural world.
Every wheel carries the story of this land, this season, and these choices. Experience what farming with intention actually tastes like.
"We chose this place because we believe great cheese should taste like somewhere. And we believe Northern Michigan is a place worth tasting."
This farm was never intended to become the largest. It was intended to become distinctive. Every decision we've made — from the geothermal system to the rotational grazing schedule to the sea salts we select for aging — has been made in service of that intention.
We are proud of what grows here. We hope you can taste it.
How We Do It
These systems are not experiments. They are operational. Built into our farm the way
walls and foundations are built — because they belong there.
Small-Batch Craftsmanship
On-farm solar arrays power our creamery, aging rooms, and farm operations year-round with zero grid dependence.
Operational
Ground-source heat keeps our facilities efficient and consistent through every season Michigan throws at us.
Operational
Harvested rainwater irrigates our pastures and reduces our municipal water draw to near zero over the growing season.
Operational
Moving our herd seasonally across defined pastures restores soil biology and sequesters carbon the natural way.
Operational
Creamery whey, organic waste, and animal manure are composted on-site and returned to the land as living fertilizer.
Operational
Dedicated native wildflower corridors and hedgerows support bees, butterflies, and biodiversity across the farm.
Expanding
We are actively redesigning our packaging toward fully compostable or recycled materials. Progress over perfection.
In Progress
Growing our own feed on-site dramatically reduces transport emissions and ensures our herd eats exactly what we intend.
