THE MILK

Our milk comes from two Amish family farms.

We are honored to work with two Amish farming families in Northern Michigan whose names we do not share out of deep respect for their privacy and the cloistered way of life they have chosen. What we can share is the quality of their animals, the integrity of their practices, and the difference that milk makes in every wheel of cheese we produce.

The First Family

The first family we work with has built their dairy over generations using methods that predate industrial agriculture — because for them, those methods were never replaced. Their animals are raised without antibiotics, without growth hormones, and with the kind of daily, personal attention that only a small family operation can provide.

Their herd grazes on Northern Michigan pastures that have never seen synthetic inputs.

Working with two families means we have access to milk with distinct seasonal qualities that influence each batch of cheese we make.

Both families share the same core values: unhurried care, no shortcuts, and a relationship with their animals that is grounded in responsibility rather than production targets. That philosophy is something Huron Bries was built on too.

The Herd

Built to last. Built to matter.

Our barns are the working heart of the farm — spaces where the daily rhythm of feeding, milking, aging, and caring for animals plays out season after season. They are not decorative. They are deeply functional.

The main dairy barn houses our milking parlor, designed for calm, low-stress milking that produces better quality milk and better outcomes for the animals. Every surface, every flow-path, and every detail was designed around the animal's experience, not operational convenience alone.

The land that feeds the land.

The orchards and nut groves on our farm serve multiple purposes at once. They provide fruit and nuts that find their way into our accompaniment line — the apple butters, preserves, and nut pairings that appear in our gift boxes and seasonal offerings.

But they also do something less visible. Their root systems stabilize soil. Their canopies create microhabitats for pollinators and birds. Their fallen leaves return organic matter to the ground. In a regenerative system, every element works harder than just its primary purpose.

Our Autumn Reserve Brie carries a direct expression of this — finished during harvest season, influenced by the fruit, the air, and the particular quality of late-season milk from animals grazing on autumn grasses.
