So we engage early, with the selection of the herds, the feed and grazing, along with overall treatment to ensure we get the highest quality milk available. We then focus our attention on not just great recipes, but the best salts, literally from around the world. Taking our time with every step along the way makes it critical to have the best aging caves in the world, meant to control every variable possible.

Cheese can always stand alone as great food. Pairing great cheese with perfect enhancements, takes greatness to excellence, and we strive for nothing less. Blueberries, strawberries, raspberries, apples, pears all carefully grown on our farms and selected for their perfect matching to our cheese is what makes this experience like none other. Additionally our California roots gives us a great path for walnuts, almonds and pistachios. From our farm to your cheese table, we believe its how food was meant to be eaten.

The uniqueness of our farms starts with the breeze we experience of Lake Huron, and why the pun in our name makes us chuckle. Sustainability is often about simply taking advantage of what is naturally occurring around you. In that spirit we have solar and wind power supplying the farm. We have built rain water and whey run off basins for reuse around the farm. Geothermal wells help us control the temperatures in the barns and caves keeping our cheese happy during the aging process and fruit for storage.
